Banana Buckwheat Bread (by the oz)

3/4 cup buckwheat flour (NOT wheat flour)3/4 cup rice flour2 Tsp potato starch2 Tsp tapioca flour2 tsp. baking powder1 tsp Xanthan gum2/3 cup brown sugar, packed1/3 cup oil or melted butter2 large eggs (egg sub. can be used)1.5 cups mashed bananasOpt: 1/4 cup chocolate chips
Preheat oven to 350.
Grease 9 x 5 loaf pan
Cream together wet ingredients with mixer. Add mashed bananas, then dry ingredients. Beat until smooth. Fold in chocolate chips.
Scoop into pan and bake 45 minutes to 1 hour, until golden brown and inserted knife comes out clean ( or if using chips, with only melted chocolate on it.)
Makes about a 35 oz. loaf. Slice to your own portion size. Nutritional info is by the ounce.
