Nina's Vegetarian Lasagna

Ingredients
4 sheets of Barilla No-Boil Lasagna Noodles.75 C Spaghetti sauce.5 C part-skim mozzarella cheese1 Bag Morningstar Farms Meal Starters: Sausage-Style Crumbles15 oz. Fat Free Ricotta Cheese1 C zucchini, sliced and halvedpepper and italian seasoning as desired1 C sliced fresh mushrooms2 C fresh spinach
Directions
Preheat oven to 375 degrees.
1. Empty sausage-style crumbles into a skillet and saute until warm throughout. Remove from pan and set aside.
2. Saute mushrooms and zucchini until mushrooms are juicy.
3. Add spinach and saute for two minutes until wilted.
4. Remove from heat and let cool.
5. Mix ricotta, vegetables, and .25 C of mozzarella together.
6. Spoon half of ricotta mixture into the bottom of a square baking pan.
7. Place half of sausage crumbles on to of ricotta.
8. Place noodles on top of crumbles.
9. Spoon half of spaghetti sauce onto lasagna noodles.
10. Spoon the rest of the ricotta mixture onto the noodles.
11. Place remaining half of sausage crumbles onto ricotta mixture.
12. Place remaining noodles on the mixture
13. Place remaining sauce onto the noodles.
14. Sprinkle .25 C mozzarella cheese on top.
15. Bake on center rack of oven for 30-45 minutes.
