Turkey Fried Rice (Brown)

Ingredients
1 tbs lite soy sauce1 c diced cooked turkey.33 c canola oil1 c brown short grain rice2 low sodium chicken bouillon cubes2 c water1.5 c chopped celery1 med bell pepper, chopped1 small onion chopped.25 c egg subtitute2 c shredded lettuce
Directions
Makes 6 servings
about 2 cups

Pour soy sauce over turkey in a small bowl; set aside. Pour oil into a large non-stick skillet; add rice and fry over medium heat, stirring constantly, until rice is browned. Add chicken bouillon, water and turkey mixture; cover and simmer 45 minutes or until liquid is absorbed.

Stir in celery, green pepper and onion; cook, uncovered, 5 minutes. Push rice to side of skillet and add egg, stirring constantly, until set; combine with rice mixture. Stir in lettuce. (Or add to individual serving). Serve immediately.
