batter:3 Tbsp softened butter 3/4 cup white granulated sugar3 large eggs1 cup unsweetened applesauce1 tsp vanilla extract4-1/2 cups all purpose flour3-1/2 tsp baking powder1 tsp salt1/2 tsp ground cinnamon1/4 tsp ground nutmeg1/4 cup skim milkcoating:1/2 cup white granulated sugar1/2 cup powdered sugar1 tsp ground cinnamon
Heat a deep fryer to 375 degrees. Cream together the butter & 3/4 cup sugar til smooth. Add eggs one at a time & beat well after each addition. Beat in the applesauce & vanilla. In a med bowl, combine the flour, baking powder, salt & spices. Add gradually to butter mixture then add in the milk & beat well. In a small bowl, combine remaining 1/2 cup white sugar, the powdered sugar and the teaspoon of cinnamon, mixing well, set aside. Drop batter by teaspoonsful carefully into the hot oil, 4 to 6 at a time. Flip with slotted spoon & cook for about 1 minute on each side. Remove & drain on paper towels. Roll in sugar mixture while warm. Makes 60 donut balls, 2 balls per serving.
