5 Boneless, skinless chicken breasts1 package neufchatel cheese1 package frozen spinach2 oz shredded mozzarella cheese1 package hollandaise sauce mixLemon pepper seasoning or salt and black pepper to taste
Preheat oven to 350; cut pockets into thawed chicken breasts with a boning knife; place chicken into casserole dish and fill halfway with water; season chicken on both sides; drain thawed spinach and add neufchatel and shredded mozzarella until evenly combined; divide into 5 equal parts and stuff into chicken pockets; softly press down on chicken to flatten and distribute spinach mixture into pockets; bake for 45 - 60 minutes until done; prepare hollandaise mix according to package instructions and pour over chicken once done

This looks better than it was, I actually found it quite tasteless : ( O.k. I had the leftovers, and it was alot more flavorful the next day...and cold/ with more salt and pepper - 2/24/08

If it was tasteless it's because you didn't properly season your chicken. As you may notice, I did not specify how much seasoning to use. It's all up to the cook's discretion and taste to adjust your seasoning accordingly.
