Fennel Soup

Ingredients
1 bulb fennel1 T butter3 C chicken stock (or sub veggie or beef stock)salt and pepper to taste
Directions
Sautee fennel in butter until lightly browned. Add stock. Cook for about 10 more minutes, or until fennel is soft. Add salt and pepper to taste, and enjoy! I think this would be nice paired with Swiss cheese melted over homemade whole wheat bread.... Mmmmm :)
