Leftover pork enchiladas

14 oz leftover pork4 cloves garlic.5 cup carrots1 cup appx mushrooms6 tbl. spoons salsa1 jalapeno 1 15 oz can black beans 12 corn tortillas.5 cup mexican blend cheese
process pork,garlic,carrots,jalapeno, and mushrooms seperately and combine in medium size bowl.
prep tortillas in a zip lock in microwave untill soft
(1 min +or-)
coat glass baking dish with cooking spray
measure .25 cup of mixture for ea
roll and set in baking dish.
Puree beans add enough water to liquify.
poor over enchiladas evenly.
bake at 350 for 30 min.and sprinkle cheese over top and melt 1-2 min.
cut zuchini into spears and lay across top.
spice up as necessary. I used cuminos.
makes 12 enchilads 1 per serving.
