Stuffed Chicken and Rice Bake

4 Chicken Breast boneless/skinless2 cups rice3 cups waterStove Top Stuffing Mix
Lightly sear chicken breasts in skillet set aside.
Cook stuffing mix set aside. Wash rice and pour in casserole dish. Pour water on top of rice set aside. Stuff chicken with stuffing mix and put into casserole dish on top of uncooked rice.
Place into a 450 degree oven for 30-45minutes or until rice is done.

This was very simple to prepare. My family liked it enough to eat it but I thought there was something missing. I think when I make it again I will add a light cream of mushroom soup and take out half a cup of water. I also added some basil to the chicken for extra flavor. Thanks for sharing! - 9/13/08
