"Lighten" Noodle Kugel (Dairy)

Ingredients
1/2 pound broad noodles2 cups fat free cottage cheese2 cups skim milk1/3 cup of butter or margarine, melted2 teaspoons cinnamon1/2 cup sugar3 large eggs1 teaspoon salt1 cup fat free sour cream or plain yogurt1/4 cup raisins1/4 cup dried cranberries1/3 cup slivered almonds2 tablespoon sugar
Directions
Cook the noodles according to the directions on the package and drain. Combine the cottage cheese, skim milk, butter, 1 tsp. cinnamon, 1/2 cup sugar, eggs, salt, sour cream and dried fruits. Fold in the noodles. Pour into a 9x12 inch pan. Sprinkle with the remaining 1 teaspoon of cinnamon and 2 tablespoon sugar. Cover with the almonds. Bake in a preheated 350-degree over for 45 minutes or until firm.

Variations: You can try your favorite dried fruit such as papaya, blueberries, strawberries, apricots what ever fits you festive mood. You may also like to try chopping one - two apples sautéed with a teaspoon of butter and a teaspoon of apple spice or cinnamon and add with the cranberries and raisins for a New England flavor. Get creative with this recipe.

    Used Splenda instead of sugar and left out the cranberries and almonds for the kind my momma used to make. The plain yogurt worked fine, too. Thanks for the recipe. - 1/29/11
