Banana-Oatmeal Bread or Muffins (appx. 1/2" slice or 1 muffin)

Ingredients
1 C. Flour (I use 1/2 white, 1/2 wheat)3/4 C. Oats1/2 C. Sugar2-1/2 tsp Baking Powder1/4 tsp Baking Soda1 egg3 Tbsp Unsweetened Applesauce1/2 C. Banana, mashed (appx 1 med banana)1/2 C. Fat Free Milk1 tsp Ground Cinnamon, if desired
Directions
Preheat oven to 350*

Blend together flour, oats, baking powder, soda, and cinnamon in a bowl and set aside. Combine sugar, egg, applesauce, banana, and milk. Add flour mixture and blend well.

Pour into prepared loaf pan or muffin tins and bake at 350 for 40-45 minutes, or until it tests done.

Makes 12 servings.
