Carrot-Wheat Germ Muffins

Ingredients
2 C Whole Wheat Flour1C Toasted Wheat Germ1 T Baking Poweder1/2 t Coarse Salt2 Eggs, lightly beaten2 T Vegetable Oil1 C Apple Juice1/2 C Frozen Unsweetend Apple Juice Concentrate, thawed1/3 C Unsweetend Applesauce1 C Grated Carrots1/2 C Golden Raisins, packed1/3 C Chopped WalnutsVegetable spray or oil
Directions
Makes 12 servings: 1 muffin per serving.

1. Preheat oven to 375.

2. Combine first 4 ingredients in a small bowl; wisk.

3. Combine the eggs and the next 4 ingredients, stirring till moist. Fold in carrots, raisins, and walnuts; spoon into muffin cups lightly coated with spray or oil, filling cups 2/3 full. Bake at 375 for 25-30 min or till toothpick comes out clean.
