Lamb Burgers with Rosemary-Mint Sauce

Sauce1 cup plain fat-free Greek yogurt2 tablespoons chopped fresh mint leaves2 tablespoons dry red wine or cider vinegar1 teaspoon chopped fresh or 1/2 teaspoon dried rosemary leaves, crumbled1/4 teaspoon salt1/4 teaspoon pepper1/4 cup chopped unpeeled cucumber1/4 teaspoon ground cuminBurgers1 1/2 lb lean ground lamb1 small onion, finely chopped (1/4 cup)1 tablespoon chopped fresh mint leaves1/2 teaspoon salt1/4 teaspoon pepper2 cloves garlic, finely chopped
Savory ground lamb cooks in minutes and gets a cooling, creamy topping full of Indian flavors.
Makes: 6 servings
1. In small bowl, mix all sauce ingredients until well blended. Refrigerate until serving time.
2. In large bowl, mix all burger ingredients until well blended but DO NO overwork. Shape mixture into 6 patties.
3. Spray 12-inch skillet with cooking spray; heat over medium heat. Cook patties in skillet 5 minutes; turn. Cook 3 to 5 minutes longer or until no longer pink in center. Serve with sauce.
DO-AHEAD:
Mix and shape the meat patties the night before, and make the sauce, too. It’ll be smooth sailing at dinnertime.
VARIATION:
Stir some chopped cucumber into the sauce. The result is very similar to raita, a refreshing dish from northern India that’s often served as a relish with curried foods.
