3 large eggs1 c 2% milk2 T melted butter or margerine1/2 c potato starchpinch of salt
Blend eggs & milk in food processor. Add potato starch & salt. Blend until smooth. Refrigerate for 20 minutes. Whisk in butter.
Heat crepe pan or skillet and spray with cooking stray. Pour about 1.5 Tbsp batter into pan and swirl to distribute over entire bottom. Adjust amount of batter for size of pan, making sure crepes are thin. Cook over medium heat for about 1 minute (the surface will look dry). Turn with flexible spatula & cook for 30 seconds on other side. Slide crepe onto plate. Continue until batter is finished
