Pinto Bean and Brown Rice Soup

Ingredients
1 pound pinto beans4 strips turkey bacon3 tbsp real bacon bitssalt and pepper to taste1 cup uncooked brown rice6 cups water
Directions
Soak beans over night and rinse in the morning. Simply throw all the ingredients in the crock pot and set to low setting. Cook for about 4-6 hours or until the beans are nice and tender. I left it to cook all day while at work and it came out perfectly. I prefer to use a potato masher to break apart the beans and impart a nice texture throughout the broth, but it is not required. This recipe makes 8 1-cup servings.
