Italian Sausage Tortellini Soup

Ingredients
1 lb italian sausage1 cup coarsely chopped onions2 garlic cloves chopped5 cups beef broth1/2 cup water1/2 cup red wine2 cups chopped tomatoes1 cup dry red wine or water1 cup thinly sliced carrots1/2 tsp basil1/2 tsp oregano8 oz can tomatoe sauce1 1/2 cup sliced tomatoes8 oz (2 cups) frozen cheese filled tortellini3 tbls chopped fresh parsley1 medium green pepper cut into 1/2 in piecesgrated parmesan cheese
Directions
If sausage comes in casing,remove casing. In 5 qt dutch oven, brown sausage. Remove sausage from pan, drain well reserving 1 tbsp. drippings in pan. Saute onions & garlic in reserved drippings till onions are tender. Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil. Reduce heat, simmer uncovered for 30 minutes. Skim fat from soup. Stir in zucchini, tortellini, parsley and green peppers. Simmer covered for 30 to 40 minutes or until tortellini are tender. Sprinkle parmesan cheese on top of each serving.
