Caprese Skewers

Ingredients
20 grape tomatoes20 small basil leaves20 Mozzarella Ciliegine1 tbsp extra virgin olive oil1 tbsp balsamic vinegarsalt & pepper to tasteToothpicks
Directions
Soak toothpicks for 1 hour to avoid splintering while assembling skewers.

On each toothpick, put one tomato, one folded basil leave, and one mozzarella ball. Arrange on a plate, drizzle with oil and vinegar, and sprinkle with salt & pepper.

    This is one of my FAVORITE picnic/potluck treats. It's like summer on a toothpick, and, they are as CUTE as can be! I use cocktail tomatoes, cut in half and make a little tomato/mozzerella/basil/tomato sandwich on the toothpick. Can also use marinated mozzerella, vs. drizzling with oil/vinegar. - 5/31/10
