Bacon & Cheese Omelet

Ingredients
2 large eggs2 slices, precooked bacon, heated to directions1/4 cup Colby/Monterey Jack shredded cheese1 tsp. olive oil
Directions
Heat a skillet with the olive oil to medium heat. Scramble the eggs in a bowl, adding salt and pepper to taste. Pour eggs into the skillet and allow to cook until almost set. Turn over, using a spatula. Turn off the heat and add cheese and bacon strips. Fold omelet in half and serve. Makes 1 omelet.
