Ingredients
1 Tbs of Olive Oil to large fry pan. Add 1/4 C diced onions, 4 cloves diced garlic cloves (or more to taste), 1 cup of chopped or sliced mushrooms. Stir fry until browned. Add 1/4 C diced green pepper. Cool mixture if preparing the night before. Cook 1/2 pound of hamburger. Cool.Dice one medium red tomato (about 3/4 C or more of diced tomato. In morning...scramble appdroximately 1 C egg whites (may add 1 whole egg). add veggie mixture and cooked hamburger. Heat through. Add tomato. Top with crumbled feta cheese and serve.Makes 4 servings.
