Crock-Pot Carribean Black Beans

* 1/2 medium sweet onions chopped * 2 garlic cloves chopped fine * 2 tablespoons olive oil * 1 tablespoon fresh grated ginger root * 1/2 teaspoon ground allspice * 1 cup dry black beans * 3/4 cup orange juice * salt & freshly ground black pepper
Procedures:
Soak Black beans in water overnight
Cook black beans in crockpot for a few hours on high, until beans are soft
Chop onion and garlic together and set aside
Grate ginger and set aside
When soft, drain beans and reserve them in a separate container
Keep crock pot on hi setting
Add onions and oil to crock pot and stir a few minutes until onions look softer
Add garlic stir 2 more minutes
Add ginger and all spice and stir
Cover crock pot for 5 minutes to soften vegetables
Add beans to crock pot and mash 1/4 to 1/3 of the beans, stir well
Add OJ
Cover crock pot for 10 minutes, still on hi setting
Serve over brown rice or with dosas
