Yummy Carrot Cake (Lite Version)

Ingredients
1 1/2 c. sugar3 cups shredded carrots4 eggs1 c. apple sauce1 tsp. vanilla extract2 cups flour2 tsp. baking soda1 tsp. salt1/2 c. coconut(nuts and raisins are optional)
Directions
Spray 9x 13 baking dish with non-stick cooking spray. Combine sugar and wet ingredients, beat with mixer until smooth. Add dry increadients together. Bake for 30 minutes at 350 degrees Farenheit. Makes 12-2"-square servings.
