Flat Bean & Raw Zucchini Salad with Mint Dressing

300g flat green beans, stalk end removed2 medium zucchini, julienned1/2 cup pitted black olives100g thinly sliced sun-dried tomatoes1/4 cup olive oil2 Tbl lemon juice or white wine vinegarSmall handfull mint, roughly chopped1 tsp Dijon mustard1 clove garlice, crushedSea salt & freshly ground pepper
Cook the beans in boiling salted water until just cooked. Drain and refresh under cold water. Pat dry with kitchen towels and cut in half. Put the prepared beans, zuchinni, olives and tomatoes in a bowl. Whisk all the remaining ingredients together and toss through the vegetables.
