Sweet Potatoe Cornbread

Ingredients
1 cup whole wheat pastry flour1 tsp baking powder1/2 tsp baking soda1/2 tsp sea salt1/8 tsp allspice1/2 cup cornmeal1/2 cup soymilk, rice milk or low/nonfat milk1/2 tbsp apple cider vinegaregg replacer equal to 2 eggs 3/4 cup cooked, mashed sweet potatoe4 tbsp coconut or olive oil1/4 cup agave or maple syrup
Directions
Preheat oven to 375 degrees. In a large bowl, mix together the dry ingredients. In a medium bowl whisk together the milk, vinegar, and egg replacer. Fold in the remaining ingredients.

Add the wet ingredients into the dry and mix until well incorporated. Pour into lightly oiled 8 inch square pan. Bake for 25-30 minutes, or until toothpick comes out clean.
Makes 9 servings.
