Veggie Quesadilla

Ingredients

2 bell peppers1 package mushrooms1 onion2 cups shredded cheddar or colby cheese6 whole wheat tortillas
Saute onions until tender. Add sliced up peppers and mushrooms. Cover until peppers are tender.
On a plate, place a tortilla and heap the mushrooms, onions, and peppers on top. Sprinkle cheese over this and fold in half. Toast in the toaster oven on medium until the edges turn golden brown.
Serves 6. Can be served with salsa, beans for extra protein.
