2 cups rice, uncooked2 cups low sodium chicken stock2 cups lite coconut milk2 tbsp cilantro5 packets truviajuice from one lime
Pour coconut milk and chicken stock into pot and heat to a boil. Add rice and cook for 15 minutes. Add truvia and stir.
Cook for 5 minutes more, stir in lime juice and cilantro. Let it sit for just a minute to soak up any residual liquid
