Spicy Stir-Fry Scallops

Ingredients
1-1/2 tbsp olive oil12 oz scallops5 - 6 oz frozen veggies1 cup diced tomato1 tbsp teriyaki sauce1/4 tsp crushed red pepper flakes
Directions
Heat olive oil in skillet or wok over high heat.
Add scallops and stir fry for 1 minute.
Add frozen veggies and tomatoes. Stir fry until scallops are firm and veggies are hot, about 2 - 3 minutes.
Stir in teriyaki sauce and crushed pepper flakes.
Serve over 1/2 cup cooked brown rice.

    I'm thinking this would be better with fresh veggies sauted first and then adding the scallops. Frozen veggies tend to be soggy and scallops don't take long to cook. Good theory though. - 11/10/08
