Ingredients
2 soft ripe Avocados1 medium Tomatoe (about 1 cup chopped)1/2 cup mild onion - diced small1/4 cup fat free sour creamlime juicefresh cilantro or parsley - chopped other herbs & seasonings to taste
Directions
1. Slice avocados in half and run a knife through them to create dice. Scoop out with a spoon.
2. Squirt lime juice over avocado and mix slightly.
3. Add tomatoes & onions. (Remove most of juice and seeds when dicing tomatoes if possible. Roma tomatoes are fleshier and are great for this recipe.)
4. Add fat free sour cream, herbs and seasonings to taste. Mix well. Refrigerate to allow flavors to blend.
5. Serve as a snack, salad topping, sandwich spread, with Mexican food, or as a dip with tortilla chips or dry baked pita or bagel chips.

    I added a pinch of cayenne pepper and a dash or two or Texas Pete Hot sauce and garlic although I used reduced fat sour cream and not fat free and this is absolutely fantastic! My guests and my husband loved it! I will definitely make this again. Thank you! - 2/18/08

    However, I'm a newbie when it comes to seasoning, so a bit more information on the amount of cilantro and a hint as to what other herbs and seasoning might go in guacamole would be nice. But, I like and will make it again. - 1/20/08
