GFCFSF Quinoa Raisin Muffins

Ingredients
1 cup quinoa flour (I ground my own with a coffee grinder)1/2 cup millet flour1/2 cup sorghum flour1/2 tsp xanthan gum1/2 tsp baking soda1 medium pear1/2 medium bananaThe above created about 1 cup of puree1/2 cup almond milk (or milk or other substitute)1 tbsp apple cider vinegar mixed in2 tbsp olive oil1 egg1/2 cup raisins
Directions
Whisk together flours, soda, and gum.

Puree fruits
Sour milk with vinegar.

Add fruits, soured milk, olive oil, and egg to flour mix and stir together until moistened.

Fold in the raisins

Pour into muffin tins and bake at 350F
I made mini-muffins, and the cooked in about 15 min/batch

This recipe made 30 mini muffins
