Tofu Sloppy Joes

1 TBSP. olive oil2 medium cloves garlic, minced1 medium green bell pepper, chopped1 small onion, chopped1 lb. extra-firm tofu, well-drained and crumbled or diced2 TBSP. soy sauce1 1/2 c. tomato sauce1 TBSP. chili powder1/2 tsp. ground cumin2 TBSP. brown sugar
Heat oil in a large skillet. Saute vegetables until soft, 7-10 minutes. Add soy sauce and tofu. Cook until tofu is slightly browned. Stir often to prevent sticking. Add remaining ingredients. Mix well and cook until heated through. Serve over a piece of wholewheat toast (not in calorie count).
Makes 6 servings.
Tip: Make sure to drain the tofu well. If you have trouble getting good firm tofu, freeze the tofu, thaw in the fridge, then wrap in a towel and press under a weighted cutting board before crumbling it.
