Spicy Papaya Salad

1 medium HARD papaya, shredded (use a grater, and do NOT use a soft papaya)1/2 cup cherry tomatoes, quartered2 scallions, chopped2 shallots, sliced thin3 thai hot peppers (small and red), diced fine2 tsp soy sauce1 t rice wine vinegar1 t agave nectar (or sugar, sweeten to taste)1 lime, juiced1/2 cup chopped peanuts1/4 fresh mint, choppedsalt and pepper (optional)
Make dressing, combine soy sauce, rice wine vinegar, agave nectar and lime juice. Whisk until well combined.
Combine papaya, tomatoes, scallions, shallots and hot peppers in medium bowl. Using a wooden spoon mix until well combined, add dressing and mix again.
In a small bowl combine chopped peanuts with mint, chop and mix well. Top salad with peanut mixture and enjoy!
