Anchovy Tomatoe Pizza on a Hi-Fiber English Muffin

1 Thomas's high fiber, 100 calorie English Muffin, toastedtomatoe paste4 anchovy fillets, minced and dividedfresh basil, minced and dividedfresh tomatoe, 2 large slicesgrated (or shredded) Parmesan cheese, divided
This is a fast meal (any meal) for one. Use the rest of the tomatoe in romaine salad with MORE anchovies and parmesan and an olive oil vinegar dressing!
Toast the English Muffin. Spread tomatoe paste on the Muffin halves. (use the rest of the can to make lots more, or in a soup or a sauce.) Mince the anchovies and basil (you could substitute dried, or use oregano) and distribute evenly onto the Muffin halves. Place a tomatoe slice ( large beefsteak tomatoes fit nicely) on top sprinkle on the cheese. Place under the broiler or broil in a toaster oven for 5 minutes or until cheese is melted and the pizza is hot.
