Gourmet Corn Bread

Ingredients
1 cup whole wheat flour3/4 cup yellow corn meal1 cup unsweetened soy milk2 egg whites3/4 cup zucchini, grated (about 1 medium zucchini)4 basil leaves, finely chopped (or 2 tsp dried basil)1 1/2 jalapeno peppers, diced1/2 cup feta cheese, crumbled2 tsp baking powder
Directions
Preheat oven to 400 degrees F and lightly coat 12 muffin cups with nonstick spray.

Mix dry ingredients until combined. Add wet ingredients and mix.

Pour equally into 12 muffin cups. Bake at 400 degrees F for 15-20 minutes or until crowns are golden.

Makes 12 muffins, one muffins per serving.
