Spinach penne with anchovies

Ingredients
1/2 package penne pasta1/2 package frozen spinach1 small onion diced3 small cloves garlic diced2 cups marinara sauce1/2 cup part skim mozzarella 6 oz part skim ricotta cheese1 can anchovies, oil reserved
Directions
pretty easy, cook pasta, dice and mix onion and garlic. saute onion and garlic in anchovy oil, add spinach and anchovies and toss. mix in pasta. layer in a casserole dish the ricotta cheese, then pasta mixture, then cover with marinara, and top with mozzarella cheese. season to liking and bake covered for 30 min. when it comes out it's layered like a lasagna but soooo different and delicious. enjoy!
