Healthy Oatmeal Blueberry Muffins

Ingredients
1 cup plus 2 tbsp. white whole wheat flour6 1-oz. packages instant regular oatmeal1/2 cup sugar1 Tbsp. baking powder1/2 tsp. salt1 cup skim milk1 egg1/4 cup canola oil1 cup blueberriesTopping:1 Tbsp. sugar1 Tsp. ground cinnamon
Directions
Makes 12 muffins.

Preheat oven to 425 degrees. Line twelve 2-1/2 inch muffin pan cups with paper baking cups.

In medium mixing bowl combine dry ingredients. In small bowl, using a fork, combine skim milk, egg and canola oil. Fold in blueberries. If using frozen, thaw and rinse before using.

Pour an equal amount of batter into each cup.

Combine sugar and cinnamon for topping and sprinkle evenly over muffins.

Bake for 20-25 minutes (until lightly browned and toothpick inserted in center comes out dry).
