Tai Coconut Milk Chicken Curry

Ingredients
1 1/2 boneless skinless chicken breast cubed2 lg onions sliced1 c red pepper strips1 can (8 oz) pineapple chunks1 can Lite Coconut Milk1 tsp ground black pepper2 Tbsp curry powder2 Tbsp morrocan spice blend1 tsp salt
Directions
Spary non stick skillet w/cooking spray.
Saute chicken until golden. Add spices.
Add onion and pepper. Cook for approx 4 minutes. Add pineapple (including juice) and coconut milk. Adjust spices as necessary. Simmer for 10 - 15 minutes. Serve over brown rice.

Makes 4 servings. (approx 1 cup)
