Apple Whole-Wheat Muffins

Ingredients
1-1/2 cups whole wheat flour 1/2 cup all-purpose flour, unbleached1/4 cup oats2-1/2 tsp baking powder3/4 tsp salt1-1/2 tsp cinnamon3 Tbs buttermilk powder + 3/4 cup water OR 3/4 cup buttermilk or milk (buttermilk powder was figured in nutrition count).1 egg, beaten1/2 cup unsweetened applesauce1/4 cup honey1/4 cup sugar1 tsp vanilla extract1 cup chopped apples (I don't peel them)Topping (optional - is included in calorie count)1/4 cup oats1/4 cup brown sugar (not packed)1/4 cup chopped walnuts
Directions
Makes 46 mini-muffins.
Preheat oven to 400 degrees F.
Grease or spray mini-muffin tins.

In small bowl, combine flours, oats, baking powder, salt, cinnamon, and buttermilk powder.

In a larger bowl, combine water (or milk), egg, vanilla, honey, sugar, and applesauce.

Add flour mixture to liguids; fold in apples.
Spoon into prepared muffin tins.
Sprinkle topping over batter.
Bake in preheated oven for about 11-14 minutes or until toothpick inserted in center comes out clean.

    These would be a lot better if they weren't whole wheat. I think there is too much going on with the apples, oats and whole wheat. - 7/22/07
