Spicy Peanut Noodles

Ingredients
1/2 cup peanut butter1/3 cup soy sauce1/3 cup lightly-packed light brown sugar (can use less)1/4 cup peanut oil (can use less)2 TB water4 garlic cloves1/4 tsp ground ginger2 tsp crushed red pepper flakes2 TB hot rooster sauce1 box of pasta (about 14 oz or so)
Directions
1. Blend the peanut butter and soy sauce together in a saucepan under medium-low heat.
2. Once blended, add in all other ingredients, EXCEPT the pasta.
3. Cook the pasta per instructions on the box.
4. After pasta is drained, put pasta back into its cooking pot and pour the sauce over top.
5. Mix well and serve up.
MAKES: 3 large servings (as main dish) or up to 6 servings as a side dish.

    This recipe gets 5/5 for taste, 5/5 for ease in making. I gave this 3/5, because it has higher sodium, and no vegetables.
    My husband and I used reduced sodium soy sauce, 1/2 the rooster sauce, 1T of pepper flakes, and made a bag of frozen veggies to mix with it. - 6/12/10

    1 tsp of Siriacha, I assume is the rooster sauce, has 100mg sodium. If you cut back on that and use the low sodium soy sauce, it would reduce the sodium greatly. I'm going to try this one out soon. - 5/31/10

    Haven't tried it yet, but to SWIM 2 SLIM, try using low-sodium soy sauce. My guess is that's where a large portion of the sodium is coming from. It's what I would use for the same reason. - 5/27/10
