Braised Turnips

Ingredients
1.5 T olive oil1.5 cups sweet onion1/2 cup fresh chopped chives2 cloves minced garlic2 cups chopped carrots3 turnips, cubed (about 3 cups) 1/2 cup chopped fresh parsley or 1 T dried1 T chopped fresh thyme (or 1/3 T dried)1/2 cup chicken broth1 T balsamic vinegar1/2 t saltfresh ground pepper to taste (about 1/2 t)
Directions
Heat oil and sherry in a high sided skillet for 3 minutes. Add onion chives and garlic and saute until onion is translucent. Add carrots, turnips, parsley, and thyme and stir fry for about 2 minutes. Add broth, cover, and cook for about 20 minutes or until turnips and carrots are tender. Remove from heat and add vinegar, salt, and pepper. Serve immediately.

This made approximately 6 1-cup servings, but the calorie count is so low you can overeat without guilt. :-).
