Mom's Sweet Spaghetti Sauce

ground beef 1 lb. (costco frozen 4% fat was used in nutritional info)2 large 28 oz. cans diced tomatoesTomato Paste 1 small 6-8 oz canMushrooms 1 - 12 oz can stems & pieces Brown Sugar 1/4 cup packed Oregano, ground, 1.5 tsp Basil, 1.5 tspOnions, raw diced - about 1/2 onion Parsley, dried, 1.5 tsp Pepper, black, 1 tbspSalt, 1 tspGarlic, 2 cloves minced
Brown beef in large soup pot or dutch oven. Drain beef if needed. Add all remaining ingredients and stir well. Use only 1/2 the mushroom juice, save the remaining. Bring sauce to a boil then reduce heat to simmer. Cover pot and stir occasionally. Cooks for an hour or more. The longer it cooks, the better it tastes! If the sauce is too thick, add remaining mushroom juice.

This was a fantastic sauce! I added a few things of my own to clear out my fridge- some bell pepper, garlic chives, green onions, orange tomato, and shredded carrot. The base recipe was a hearty but sweet sauce, and it lends well to additions. I did leave out the beef as I'm a vegetarian. - 6/6/10
