Almond Barley Risotto

Ingredients
1 cup raw Pearled Barley1 cup Onions, chopped1/4 cup Green Onions, sliced1/2 cup Carrots, shredded1/2 cup Celery, chopped1/2 cup Parsley, chopped1/2 cup slivered Almonds1 T. Butter2 cup 99% fat free Beef Broth
Directions
Brown onions, barley and almonds in butter until barley turns golden. Place into a casserole dish. Add parsley, green onions, carrots, celery, & broth. Bake uncovered for 70 minutes at 350 degrees or until all moisture is absorbed.
