Strawberry Muffins

1 cup skim milk2 teaspoons canola oil1/4 cup unsweetened applesauce1/2 teaspoon vanilla2 egg whites1 cup all purpose flour1 cup brown rice flour1/3 cup sugar3 teaspoons baking powder1/2 teaspoon salt1 cup fresh strawberries, diced
Heat oven to 400 degrees. Spray 12 medium muffin cups with nonstick spray, or line with paper baking cups.
Beat milk, oil, vanilla, egg whites, and apple sauce in a large bowl. Stir in flours, sugar, baking powder, and salt all at once until flour is moistened (batter will be lumpy). DO NOT OVERSTIR!!!! Fold in strawberries. Divide batter evenly among muffin cups.
Bake 20-25 minutes or until golden brown. Immediately remove from pan to wire race. Serve warm if desired. Makes 12 muffins.
