Best Fish Ever

Ingredients
* Ocean Perch (fish), 16 oz * *Potato, raw, 2 medium (2-1/4" to 3-1/4" dia.) * Butter, unsalted, 1 tbsp * Garlic, 2 clove
Directions
Preheat Oven to 350. Smear cast iron skillet with butter. Peel potatoes and slice very thin. Place potatoes around bottom of skillet until it's covered. They will overlap slightly. Mince garlic and spread on top. Season with salt and pepper. Arrange fish fillets on top of potatoes. Cook on med. high for about 10 minutes, until potatoes start to soften. Put skillet in oven and cook until fish is cooked through. About 10 minutes
