Homemade Butter Beans

16 0z large dry lima beans1 ham shank1 large onionwater to coverbutter salt and pepper to taste, not included in nutritional content
rinse and pick lima beans for bad beans,stones etc.
Place in dutch over about half full of water
add ham shank
let simmer on stove about 2 or 3 hours on medium heat
add chopped onion
salt pepper and butter to taste, I usually add a stick of light unsalted butter to the whole pot
let simmer another hour or two,
you may have to add water as some will evaporate
Use your own judgement as to how thick you want your broth
Makes about 6 1/2 cup servings, depending on your soup content
