Saskatoon Berry Oat Bran Muffins

Ingredients
1 egg, slightly beaten1/2 cup milk or yogurt1/4 cup canola oil1/4 cup honey2/3 cup unsweetened applesauce1 tsp vanilla extract1 cup oat flour or whole wheat flour (I used oat)1 tsp baking powder1 tsp baking soda1 cup oat bran1 cup Saskatoon or other berries1 tsp ground cinnamon
Directions
Preheat the oven to 375F. Lightly grease a 12-cup muffin tin or line with paper or silicone liners.

In a blender or food processor, combine the egg, milk, oil, honey, applesauce adn vanilla. Mix well and transfer to large bowl.

In another bowl, combine the flour, baking powder, baking soda, oat bran, berries and cinnamon. Stir into egg mixture utnil just blended. Do not overmix.

Spoon batter into prepared muffin tins.] Bake in preheated oven for about 15 minutes. Muffins are done when they spring back after being pressed lightly.

Makes 12 muffins.
