Healthy Sweet Potato Fries

Ingredients
2 large sweet potatoes - sliced into thin strips1/8 cup extra virgin olive oil5 tbsp Splenda1 tbsp ground cinnamon2 tbsp Kosher salt
Directions
Heat oven to 425 degrees.
In a small bowl, combine the Splenda, ground cinnamon, and salt. Set to the side.
Arrange the sliced sweet potatoes on a cookie sheet so that they are in one layer.
Drizzle with extra virgin olive oil.
Sprinkle with Splenda mixture.
Bake at 425 degrees for 20-30 minutes, depending on desired crispiness.
Let cool 5-10 minutes before eating.

    The recipe is actually good but I eliminated the splenda and the cinnamon. Sweet potatoes are naturally sweet and that's enough for me - 7/25/09

    I have been making baked sweet potato fries for years, but I add crushed fresh garlic and/or garlic salt, chili powder, cumin, pepper in a ziploc bag with the olive oil, shake up to thoroughly coat the pieces, and then bake. I also have used "Caribbean Jerk" seasoning instead of the other spices. - 6/16/08

    When I put this in the recipe calculator, I got fewer calories (about 94) and less sodium (about 2000) - not sure why. That's still a lot of sodium I can't have, so I'm going to try it with little or no salt. - 6/19/08

    I make my sweet potato fries by just spraying them with EVoo spray and sprinkling them with garlic powder and whatever spices and/or hebs I'm in the mood for that day. I'd never add so much salt tho - wouldn't be good for my husband especially and any of us in general. - 6/13/08

    I love sweet potato to begin with so this was very good. I added a bit of EVOO a pinch of pepper and added crushed garlic and mixed everything together and it tasted wonderful.. hubby and the kids really enjoyed them and we also ate the baked garlic which was very good. - 6/13/08

    My way of making Sweet Potatoe 'Fries" is to do more of a 'home-fries'cut (chunky). Then tos with 1/4c EVOO and 1/8c/ Light Soy or Teriyaki and 1/8 t. Cayene; Bake at 425 for 20 -30 mins. I've also made these then cooled them and tossed with 1/4c. Balsamic vinegar for a salad in the summer!! - 6/15/08

    I made this without the sugar or cinn. and used a ziplock bag with a small amt of EVOO and shook the cut up potatoes before placing in oven. Make them all the time. They don't need seasoning I don't think!
