This is for a 9x13. 1/2 C unsweetened applesauce ( or apple in the blender)1/2 C (scant) sweetener (I use agave nectar or brown sugar, just personal preference, sugar is sugar, for the most part)3 eggs (grass-fed free range organic :-\ or enerG egg replacer)1 C liquid (almond milk, rice milk, soy milk, juice, or water)1 t (scant) salt1 T baking powder3 C quick oatsNuts and fruits --and cinnamon -- are optional (I've used raisins, craisins, chopped apricots, apples, peaches, or blueberries, raspberries -- whatever you like. But not strawberries. They turn to mush and disappear.Mix the first 4 ingredients together. Mix the dry stuff together, and then mix it into the wet stuff with the additions of choice, pour into 9x13, sprinkle with cinnamon and a little brown sugar and bake at 375 for 20-25 minutes (springs back when touched lightly in center). Once it is all mixed together in the bowl, don't let it sit very long before putting it in the oven; it'll get mushy.
