Ingredients
Ingredients:1 C (overflowing) canned pumpkin1 C black beans (rinsed)1/2 C cannellini beans (rinsed)2 Tbsp extra virgin olive oil2 cloves garlicjuice from 2 lemons1/2 tsp cumin (this totally made the dip!)1/4 tsp salt1/4 tsp pepper

Toss it all into a food processor and whirl away! Keep refrigerated until ready to par-tay, then serve with blue corn tortilla chips, pita chips, crackers, veggies, or whatever you like!

    This is very good, similar to humus, and i like the subtle pumpkin flavor. And it keeps well too, survived a whole week in the fridge. It's got too much lemon juice, though, and it still lacks something to be perfect for my tastes. I think i'll try adding some tahini next time and see what happens! - 10/10/10

    Re: pumpkin shortage - there was a cold spell last year that ruined the crop and caused the shortage. Pumpkins are growing again and we should have more on the shelves in a few months! I love pumpkin and am eager to get my hands on some. - 8/4/10

    Sounds good. I can't believe that stores don't carry canned pumpkin all year around. I live in Ontario Canada and our stores have it all the time..sometimes it is hard to find. Some stores have it in the bakery aisle, canned veggies or fruit aisle. I hope you find it. - 8/3/10

    I would like to add a tip in reference, to this recipe: I would like to have recipe so it used whole can (example 1 can pumpkin:16 oz= 2 cups (maybe not heaping) same with beans 1 can =2 cups, +1 cup of cannellini beans instead of 1/2 cup, but this recipe calls for juice of two lemons, do I double? - 9/5/14
