Poached Egg with Black Olive and Spinach Pasta

Ingredients
2 oz dry Smart Taste Thin Spaghetti, cooked to desired tenderness1/2 medium white onion, chopped2 roma tomatoes, chopped3 cloves garlic, minced2 cups, packed fresh spinach8 large black olives, chopped1/4 cup grated parmasan cheese2 large eggs, poached1 Tbsp canola oil
Directions
Combine oil, garlic, tomatoes, onions and black olives in pan and saute until onions are tender. Add spinach and continue saute'ing until spinach turns dark green. Add parmesan cheese and stir through. Plate spaghetti in serving bowl. Top with tomato "sauce" and poached eggs. Stir together until creamy. Divide. Makes 2 dinner servings or 4 side servings
