Citrus Candied Yams

4 medium sized yams or sweet potatoes (to yield 4 cups)1 cup orange juice2 T orange zest1/3 cup brown sugar1 T cornstarchpinch of salt3 T butterRosemary, if desired
Cut yams in quarters. Cook at a slow boil until fork tender (with skins on). Drain and remove skins. Place cut side down in casserole dish.
Melt butter in saucepan on stove. Add dry ingredients. Whisk in orange juice and cook on medium high until slightly thickened. Pour over yams.
Bake in 350 oven for 50 minutes.
