1 Egg1/3 cup egg whites from carton or egg whites from 2 eggsa couple of mushrooms, choppedhandful baby spinach (aprox. 1/2 cup packed)1 oz. feta cheese
Scramble together egg and egg whites. Chop mushrooms. Spray pan with cooking oil (if non-stick) and sautee mushrooms until soft. Add spinach and cook until it begins to wilt. Pour on egg mixture and sprinkle with feta cheese. When egg starts to pull away from pan, flip to make omelet. Cook until egg stops running.
