Kidney Bean/Sweet Potato Burrito Filling -

Ingredients
Sautee the onion, jicama and garlic. Add the cooked beans, mustard, soy sauce, chili powder and cumin. Add the water. Mash. Simmer on low until the beans are as soft as you want them. Serve with a whole wheat tortilla, dollop of mashed sweet potato and anything else you want (greens, cheese...)This goes well with a dollup of mashed yams over the top of the kidney bean mixture. Do that if you want - just be baking the yam while the mixture simmers. My FAVORITE way to eat this is to have 1/2 a cup of the bean mixture, 1/2 a cup of the yam (mixed with teaspoon of butter), and a big pile of baby greens. Sprinkle some salt over it, not much, and some snipped fresh green onion tops, and eat a fork-full at a time of all three flavors. YUMMERS! No cheese, sour cream or tortilla needed.
